Handpicked and cold soak prior to fermentation plus fermented in small vessels to achieve complexity and aromatics, we use the Pulse Air to gently sink the cap down three times per day for three weeks.
Vintage Notes
In San Benito County, the 2020 vintage was characterized by a mild spring followed by a hot summer, with heat spikes accelerating the ripening process. Despite this, and the overarching challenges of nearby wildfires, diligent vineyards harvested balanced, well-structured grapes. This vintage should yield wines with concentrated fruit flavors, underscored by the region's distinctive minerality.
